Fresh Figs with Goat’s Curd

Gluten Free, Vegetarian

organic figs curd

Ingredients (makes 4)

4 perfectly ripe figs
4 Tbsp goat’s curd
1 tsp good quality balsamic vinegar
16 or so tiny basil leaves
freshly cracked black pepper

Method

  1. Begin to quarter the figs from the stem end, stopping about 5 mm  from the bottom to maintain a base.
  2. Fill each space with 1 tablespoon of goat’s curd and gently press the fruit against the cheese. Arrange on a serving platter.
  3. Drizzle balsamic evenly over the curd. Garnish with basil and a little pepper before serving.
