Organic avocado makes a silky, rich chocolate mousse
Crazy as it may sound this recipe uses perfectly ripe avocados as the base of an incredible, creamy chocolate mousse. A heavy dose of cocoa and a hint of vanilla cover up the taste: it’s all about the texture! Serve with berries for an elegant and not-so-very-naughty indulgence.
As far as fruits go the avocado has a relatively high oil content, which is why it makes such a delicious mousse. But it contains good, essential fats which are nutrient dense (especially vitamins C, E and K), unprocessed and easily assimilated by the body.
Ingredients (serves 6-8)
4 small ripe avocados
½ cup agave syrup
2/3 cup raw cocoa powder, plus extra to dust
1 Tbsp vanilla extract
a pinch or 2 of sea salt
Method
1. Halve and seed the avocados then scoop the flesh into a food processor.
2. Add remaining ingredients and process on high until very smooth, using a spatula to wipe down the sides. Taste: adjust the sweetness to your liking and blend in an extra tablespoon of cocoa if you can taste avocado.
3. Divide between 6 (or more!) small glasses and dust with cocoa.
